Père Labat is the rhum of Distillerie Poisson on Marie-Galante, the small, flat, windmill-dotted island off Guadeloupe that many agricole drinkers consider the purest expression of French Caribbean cane. The distillery was founded in 1916 by Édouard Rameau and named for Père Jean-Baptiste Labat, the Dominican friar who modernized rum distillation in the French Antilles around 1700. Cane is cut by hand, crushed within hours, fermented slowly on fresh juice, and run through a red-copper Creole column. Hors d'Âge is the top of the regular Père Labat range: rhum agricole aged eight years in oak and bottled at 42% ABV. Eight tropical years is a long time for cane spirit, and the result is deep and polished, with the pepper and green cane of the young rhum folded into caramel, tobacco, dried fruit, and toasted wood, and a long, warm finish.
