A Considered Choice｜Siembra Alteno Blanco Tequila｜ Other Products

Siembra Alteño is David Suro's highland tequila made at La Alteña — the Camarena family distillery behind El Tesoro and Tapatío — the highland terroir bottle in a series built one distillery at a time. Suro is the Philadelphia restaurateur, author, and agave evangelist behind Siembra Spirits, built to show what Jalisco's best traditional distilleries already do — mature agave, brick ovens, native yeast, copper pots, zero additives — and Off Premise Chicago lays out the map: Valles for the lowlands at Cascahuín, Alteño for the highlands at La Alteña, Ancestral for the oldest methods. The Alteño Blanco is 100% Los Altos blue Weber agave grown to maturity, slow-roasted in brick hornos, crushed by La Alteña's two-ton stone tahona, fermented with the fibers in wooden tanks, distilled in copper, and bottled at 40% ABV, additive-free; check your bottle for the lot. La Alteña's house signature — the earthy, mineral, tahona-driven agave that makes El Tesoro Blanco a benchmark — through Suro's lens: expect a nose of roasted agave, citrus, and highland florals with a clay minerality, opening into a full, oily palate of agave, pepper, and lime with a long, clean finish. Honest note: the highland answer to Siembra Valles, from the distillery enthusiasts rank alongside Fortaleza and Cascahuín — buy the pair and taste the map. Neat, in a copita.
