Paladar is the newer project of the Orendain family, the people behind Arette and one of the last independent founding families still making tequila in the town of Tequila, Jalisco, with Eduardo Orendain Jr. as master distiller. The agave is seven-year blue Weber from the family's own fields, slow-cooked in brick ovens, fermented with a proprietary and wild yeast blend in open-air pine boxes, and twice distilled through copper and stainless alembic stills. Every bottle is hand-dipped in the volcanic soil of the agave fields. Still Strength is the Blanco exactly as it came off the still: no water added, no dilution, bottled at 101 proof (50.5% ABV) after resting in stainless steel. Skipping the proofing step keeps all of the agave's natural oils in the bottle, so it's bold, aromatic, and thick on the palate, with intense cooked agave, pepper, and minerals, yet surprisingly balanced for the strength.
