Heaven Hill is the largest family-owned distillery in America, founded in Bardstown in 1935, and Grain to Glass is its traceability project: a single corn varietal grown on named Kentucky farms, distilled at Bernheim, and bottled with the seed and the field on the label. The Specialty Barrel Series changes one variable — the wood. Chinquapin is a distinct white oak species, denser and higher in vanillin than the Quercus alba of a standard barrel, and Heaven Hill coopered a limited run for this wheated bourbon, a rye bourbon, and a rye. The Wheated uses the Larceny-style wheat mashbill from Beck's 6225 corn, aged in chinquapin oak, and bottled at 105 proof.
